    Dry aged brisket

That's good to know, particularly about the brisket keeping for 50 days under refrigeration. Thanks for sharing your results! Steve

First Impressions: Auber PID SYL-1615SYS PID controller for WSM

I wrapped up the experiment last night about 7:30 or so. I had made a couple more setpoint changes up and down 10 degrees at a time and it responded well to them. There was overshoot after I opened water pan door but it recovered in a reasonable time. The amount of overshoot was about 15...

First Impressions: Auber PID SYL-1615SYS PID controller for WSM

Just for a test, I set the setpoint down 5 degrees to 220, and in about 10 minutes, the temp was holding steady at the new setpoint.

First Impressions: Auber PID SYL-1615SYS PID controller for WSM

I am currently putting my new Auber Instruments PID Temperature Controller through its paces on my 18.5" WSM for a trial run. This unit cost me $134.40 on www.auberins.com, plus 10.50 shipping, for a total bill of $144.90. (I added the $3 silicone gasket for the fan but I really don't need it)...

    Dry aged brisket

I was curious whether you smoked your aged brisket last week? If so, how did it turn out - could you tell a difference from aging it? Thanks! Steve

Post A Picture of Your COMPLETED Mini-WSM Here ! (Mini Weber Smokey Mountain, MWSM)

As I was bringing the smoker up to temp today I took a few readings of the Maverick grate probe and the Tel-Tru at the same time. I didn't think to take a pic of the probe arrangement, but the probe tips were about 1-2 inches from each other. Once it got up close to smoking temperature, I quit...

In case you're interested, this is the therm i installed. My local hardware store had them in stock for $40. I'll compare it against my Maverick tomorrow and let you know how it checks out. http://www.teltru.com/p-339-barbecue-thermometer-3-inch-aluminum-dial-bq300-2-12-inch-stem-red-zones.aspx

All these great looking new Mini's have inspired me to upgrade my Mini... I took the (worthless) thermometer I had and replaced it with a Tel-Tru, and since I am using a SJS, I drilled a couple of holes in the bottom and added ball valves. Tomorrow I plan to sic him on a chicken.

    My " mini " experiment

Thanks for sharing! Good stuff! I smoked some cheese a couple of months ago on the mini with my AMNPS. I didn't use water bottles or anything to hold the temp down - it was in the 50's outside and the smoker temp stayed in the 70's. I have a terra cotta saucer as a diffuser. I also set all the...

Thanks, and I like the simple ones too, Case. Leaves room for the meat and smoke flavors to really shine.
