    Side to side temp help

I had the same issue on my smoker that I converted to a reverse flow. I had about 45 degrees difference from end to end with firebox side hotter. I fixed the problem by making the hole at the end of the plate smaller. Just put a piece of plate at the end that you can slide side to side to find...

Brisket finished too soon ... Now what do I do?

What is your cooker temp? Do you have a digital therm at grate level? Sounds like the temp might have been too high or a thin brisket. I would lower cooker temp to 170 and resume cooking around 10

How thick does the baffle plate need to be?

1/4" should be fine. The main thing to remember is a reverse flow is pushing the heat all the way across that plate from the firebox. Too thin of a plate with a long distance to travel will cause all the heat to radiate through the plate closer to the fire and by the time it gets to the end of...

    New Patio reverse flow build

What do you plan on using as fuel? you won't need too big a fire in that size smoker but Im just having a hard time imagining working with that size firebox. I'm not saying it won't work.

    New Patio reverse flow build

I recommend using a slightly bigger exhaust like SmokeJumper. It's easier to adjust a damper on the exhaust than it is to replace the whole pipe. I was wondering if your firebox is large enough. 8" is pretty small

How thick does the baffle plate need to be?

1/8" for the plate may be fine considering the cook chamber is only 24" long. Not much length for the heat to travel. I have a 3/16" plate on my 42" long cook chamber. I do suggest you put a temporary adjustable plate at the end of the reverse flow plate in order to adjust the opening from...

    500 gallon RF Build revised

No problem. Hope it works like it did for me. I'm not 100% sure why it works but I think it has something to do with the back pressure of a smaller opening. It causes the heat to build up more at the end of the plate. After my experience, I ssuggest all reverse flow builders should have an...

    500 gallon RF Build revised

What I did was take another piece of steel and overlap the plate. That way you can slide it side to side to close or widen the gap until you find the right spot.

    500 gallon RF Build revised

Do you still have that reverse flow? I converted my offset to reverse and initially had the same problem with temperatures. I think it was 250 on the far end and 295 on the firebox side. 45 degrees difference on a 42 inch long cook chamber. No better than before I converted. I tried several...

    Gotta b crazy

Ribs were peefect. Brisket could have stayed on a little longer. Still a little chewy. I pulled it off at 205 internal temp and let it sit for several hours in oven at 170. I knew the probe didn't slide in it as easy as it should but I didn't want it to dry out. Sorry no pics. Hard to remember...

    Gotta b crazy

There are times when I would like to have an electric, gas or pellet smoker for convenience and there may be a day that one of those will be my main go to. But for now I will enjoy putting wood in the fire. And don't get me wrong I know there are plenty of people that can create great barbecue...

    Gotta b crazy

In all honesty, why would a sane person wake up at 4 in the morning to start cooking his lunch outside in 40 degree weather with a 15 mph wind? Especially in this age of technology, why am I burning wood to cook instead of using a thermostatically controlled oven? Makes no sense until you take a...
