No worries, I plan on keeping the cure on for 10 days. In the fridge for 3 days and then smoke. How much smoke? I can light the amnps from both ends for heavy smoke (3-5hrs) or from one end for a long 6-8hr smoke? Will the cured meat take smoke, how much penetration does it get?

I like the unit just fine. What I don't like is the burner that's provided from MB. So if you get the Bayou Classic then look to change the burner. I would just say to get a inline valve from the tank and go that route. Keep the tank open all the way, keep the temp controller on the smoker...

Airflow. It's that's simple. I used mine three times this week to text, the first test it went out. The second and third i opened up all of the airflow and never had a problem since. I also let it burn outside the smoker for about 5 or so minutes.
