Well I tried a butt this morning! It only took 4 hours for my meat thermometer to say it was 160 but the grill thermometer stayed around 225-250 so I think it must be wrong and was closer to 350 instead. Butt turned out good, so alls well that ends well

Before cooking used McCormick grill mates smoke house maple as a rub
Then used scotch in the foil
And Sweet Baby Rays maple and Brown sugar sauce about 30 minutes before pulling off grill
I think my gauge is reading cool I cooked these for just under 2 hours, then wrapped in tin foil with a shot of scotch for 45 minutes then another 30 unwrapped and getting a sauce bath
Stock temp gauge reads about 230
An hour and half in don't know what is going on in the box have resisted the urge to open up and look going for another 1.5 hours then wrap in foil for 2 hours then another open
