Welcome Alan, great to have you on board. You'll find tons of great recipes and methods here.
For Ribs, I'm not the right person, I specialize in whole chickens. But when I do Ribs,
I have had the best luck with the 3-2-1 method. I use Jeff's rub a little modified and
sometimes even just...
X2...147* is not going to catch anything on fire if it is not direct flames.
Still, if you feel more comfortable with something metal, you could probably
find rods and mesh to bend and fashion to your smoker at a local hardware
store or big box store. Just thinking outside the welding...
Sounds to me you're on track with the custom rack idea. You may want check around
though, there's got to be a mfg'd product out there.
There are some guys and gals on here that are great at this stuff...they'll be along shortly.
Have fun and keep us posted on your success..James
Hi Todd, PM'd you on the A-Maze-N. Yes, hot here in SW Florida too, just now starting to get out
of the high 90's and settling in to the nice 80's day and low 70's at night,BWAHAHAHAHA!
Yes, you HAVE to play around with it. I have a smoker like that and on my last
smoke (9/10) I started with a liberal bed of charcoal and added hickory just before
I put the meat on. I didn't have a problem keeping it at 230-240 consistent.
The only thing I did was put more chips in every 45...
Well..have fun with that Todd. I don't envy you a bit. I moved to
South West Florida in 1988 because I survived 13 years of
Syracuse NY winters and said enough is enough. I have been
back only once.
You know what I used to say? If you get hot, it's easy to cool off quickly,
but when you get...
Whatcha' Sayin'??? That is a great idea. I'm doing that next time, thanks GoFish. Everything looks great Scoochdude, love the rig.
What's the best beer to use? I just slap Bud Lights in cause they're on hand...always...James
Keith and Doug, no pitching in necessary. I got a great deal on
them and it is my pleasure. Thank you for offering and I am
looking forward to seeing you at the Gathering.
Yes, this is coming along nicely indeed...James
OK, now I get it. You're moving to Ga. and this is your new logo? Just read your blog and got
caught up a bit. Hope you get settled in enough to attend the South Florida Gathering Nepas.
Good luck on the move, careful on the road.
James
Have fun Al & Judy. Anna Maria reminds me a lot of Captiva, Sanibel, Ft. Myers Beach aka Estero Island down here.
You're going to like the way you feel...I guarantee it.
James
Welcome. I would not put anything on the elements. There's going to be kick back heat
and your element will suffer early demise. I'm not familiar with your smoker so I can't give
good advice on increasing the heat.
Play around with it till you see what works and what doesn't. You'll lose some...
Well, you're certainly cutting it close. If $ is not in the equation, my bullet would
be aimed at the 22 1/2. More grilling/smoking real estate. Smokin' Al would have great input
I'm sure, as well as a few others here. Good luck on the weekend smoke. Take
pics and post...James
