Dutch, where do you find the short ribs without all the fat on them, or do you trim the fat off? Every batch I've ever done has been very fatty with little meat. Am I just buying the wrong ones?
Welcome Pepper, so great to have you join our little smoking family. I checked out your website, it's great. I love looking for new recipes and trying them out but more than that I love sharing good recipes with others. That's just one of the many great things about SMF, all of the recipe...
Smoked Stuffed Apples. I usually do these over the campfire or in the oven but they turned out pretty good on the smoker. I like that pineapple idea Dutch, I'm going to give that one a try.
Welcome to SMF Craig. This is such a wonderful source of information and we'll be glad to add your knowlage to it. I was born in NE (Grand Island) but grew up in CO and MO. I still drive through there once in a while to visit family in SD.
We do alot of deer shoulder roasts and man are they good. Your headed in the right direction with the brining and bacon. I've done this two different ways. One is to use the slits and then coat with mustard and rub. the other is to rub first then top with bacon. We get good results either...
Thank Ya'll so much, this is truly an honor. I know I've been a little MIA latley. Just started a new job and haven't been able to get on here as much as I would like. Thank you for the welcome and I hope we do the OTBS proud.
Along the same lines as the electric charcoal starter. A hotplate with a tin pan of chips or sawdust would also be a good way to produce smoke with little heat. Still haven't tried cheese but we're hoping to someday soon.
Dutch, is this a glaze that needs to be used right away or could I store it in a jar to be used over time? The reason I ask is that my Dad would love this and I'm thinking it may make a great Fathers Day preasent.
Howdy Aerycks. Welcome to SMF, you couldn't have picked a better place to learn about smoking meats. I would suggest signing up for Jeffs smoking e-course, it's a wonderful primer for newbies as well as reading some of the posts here to give you an idea of where you want to start. As for your...
I don't think we'll get around to smoking this weekend. We're headed down to Table Rock Lake to see my sister and her family. We may grill but I don't think we'll be taking the smoker with us. Hope everyone enjoys a safe and fun holiday weekend.
Howdy Taz and Welcome. This is a great site, so glad you joined. I too like the offsets, that's what we smoke on and it turns out great Q. Happy Smoking!
Thanks everyone for the warm wishes and congratulations. Just glad I haven't developed an aversion to smoked meats like I have with some of my other favorite foods (like garlic and tomatoes) that would put a serious kink in my diet, LOL.
Welcome lawman. You've found a great site that I'm sure you'll enjoy. If you're a fan of chicken, or what my Dad affecionatly calls yardbird, you should try a beer-can chicken. They come out real juicy and flavorful. In the poultry section you'll find two or three different threads on how...
Howdy Alan and welcome to SMF. This is a great place to learn those finer points you were talking about. It's a great site with friendly folks. So glad you decided to join.
For your safest bet I would put it in your yard on patio stones or bricks. Even though your cooking with gas the carpeted wood deck sounds like too much of a fire hazard. Just my .02.
I have some exciting news that we wanted to share with our smoking family. Ben and I are expecting a little meat mopper in early January '07. It's great to know that we'll be able to pass this love of smoking meat onto a new generation.
Hi Larry,
Not real sue what elgin sausage is as I've never tried it. However if it comes packaged at the store see if it has a packaging lable. Most foods with additives such as sausage are required to list ingredients on their packaging (just in case someone would be allergic to something...
Howdy Rodger. Just wanted to add my welcome. If your still looking for plans for somkehouses I know there are a couple of threads that discuss them on here. Just use the search tool at the bottom left of the page to find them.
