I have a Gen 2 MES40 that I got from Lowes over a year ago. I've had decent experience with it but seem to have some trouble with the temps. The smoker runs about 20 degrees below set temperature and I've used a very reliable temp probe to compare. It always seems to be a guessing game too...

I have a bunch of frozen meat, some really nice ones too that I didn't bother vacuum sealing. :( I hope they haven't all been ruined because of freezer burn or weird stench. They've been in the freezer a looong time. LOL
That looks amazing! Hmmm.. I have a shoulder that's been in my freezer for far too long that's probably freezer burned. I wonder if I can salvage it. :)

I'm very new to smoking and have only tried a couple of times and results were not very good. What would you suggest I try with my sub-optimal smoker this weekend that I can use with regular wood chips (I'm out of pellets) and is good for, say feeding 2-4 people?

I have a real itch to smoke something this weekend but won't have the controller for a few days. :( I guess I can still smoke something at lower temp.
If I remove the water pan and put the AMNPs right where the hole is, would that cause the same issue? Or should I put the AMNPs on the first rack, which would limit the use of that rack, right?
Yeah, the forum has been great! It's almost like she was afraid of SMF or something because the minute I mentioned the name, she stopped asking questions and said she'd send out a unit right away.
I just called Masterbuilt this morning and they told me that temperature variations will occur because it is taking the temperature from the wall of the unit and that's how the unit is supposed to operate. Thankfully, I've done enough research on SMF to call BS to that and told them that meat...
I'll give that a shot... I just hope to be able to find a time that I can call when I'm not at work and at home! Seems like they only operate M-F, 8-5 EST. I'm on the West coast.
