    Just had a thought on the MES 40 Gen 2.0... Because of the slanted drip plate in the Gen 2, heat is often trapped to the right side of the smoker.  If we removed the slanted plate and maybe just stuck some rack in place of it that isn't slanted or just left it out completely, would that even...

    Yep. I originally set to 200, then raised to 210.  There was no rise in temp.  I guess I could have kept raising, but that kinda defeats the purpose, doesn't it?  That would mean that's almost 40 degrees difference.

    I don't pay attention to what the controller temp says, other than what I set it at.  The shelf temp wouldn't get over 185*.  Towards the end of the smoke, it was dropping down to 175-180*.

    I used my Weber Q grill as a shield. Hit it with a propane torch for a good long while and then put the lid on. Got a crest cherry ember. :)

    Hmmm.. I also wonder if a mix of pecan and cherry would work well.  I just picked up a pre-marinated 2# tri-tip from a local butcher.   Do you find that smoking for such a short amount of time gives it enough smoke?

    Haha! I sometimes can't even walk out on the street without getting blown over.  Wind can get up to 30mph around where I'm at.   Unfortunately, I don't have a real great path from my garage to patio without going through the house.  I'll have to attempt to find some time of shield.
