I haven't tried to freeze Yoshida's specifically but I regularly freeze the BBQ sauce I make. The batch of sauce I make every couple of months goes into Tupperware containers in the freezer and we pull one out a defrost as needed. Doesn't seem to affect the taste or texture.

I have a GOSM that seems to have an accurate thermometer - just lucky I guess. What I did was get it going, put in the water pan without any water as basically a heat deflector. I then put the temp probe in through the top vent and just let it dangle in the smoking chamber, making sure it...
First, my main wood for smoking is oak which I have lots of on my property. I gather branches that have fallen, cut them into slices about 3" long then split them with a hatchet. I keep the chunks in a plastic bag in a trash can next to the smoker.

I bought some chunks using CraigsList. I typed in "smoker wood" into the search area and a local guy came up who has a variety of woods. I bought them by the 5 gal. bucketfull. You can also use "apple wood", "hickory wood", etc. in the search area.
