    Turkey Rub

    If you haven't already, do a search for "turkey rub" and take a look.  There's a bunch of ideas.  Personally, I go naked.  I've added rubs and even a bacon weave, but IMHO, the flavors just don't penetrate the meat.  You might think about injecting, too.

    IMHO, Slim Jims are fatty CRAP!  Mods please excuse my French. Follow the recipe on the box.  I like adding extra CBP and crushed red pepper, along with additional whole mustard seed for hotter sticks.   Again, IMHO, you'll like the homemade a lot better.

    Hmm.  Call Masterbuilt and see if they would ship you the controller?  Might be a few bucks but less than a new unit.  I'm not your electrician guy.  Maybe others can help.

    I mentioned this in another reply, but IMHO, I like metal gears better than teflon gears.  I had one snap on me.  Whatever model you get, I recommend metal gears.

    Respectfully, I've had this one, too.  It has teflon gears, which broke.  Whatever you go with, I recommend you make sure it has metal gears.

    No...I just picked it up from the grocery store fresh.  After I smoked it, I forgot about it.  My wife found it 18 months later.  It was tangy, but not overbearing.  I thought it was great!

    According to the label, I cold smoked this with alder for 2 hours.  As a rule, I wait a minimum of two weeks before trying it.  It was pretty good back then, as I recall.  I vacuum packed the rest...and forgot about it.  My wife found some and brought it up for dinner last night.  OUTSTANDING!!!!

    Sorry, but I do a lot of turkeys at 225.  I brine mine for a couple days before going in the smoker.  You're going to an internal temp of 165.  Here's a pic of one I did for my dad.  This one was in my MES 30 Gen1.
