Hello. Looking for some pit temp help

some boys at Texas A&M ag built their own pit, and used some sheet steel for the top with a couple holes drilled for dial thermometers, but apparently they just use one reference - Texas Pig Pit pretty nice thing. wish I had room in my backyard for one... (and enough people to justify having a...

How do you chop your firewood down to the Karubecue C60 size brick or redbull can size? Axe recommen

I second on the kindling cracker - easy to do at the end of the day when you're tired and don't want to wind up overstriking, understriking, or picking up your toes and putting them in a cup of ice to go to the ER.

    Virgin Smoker

you're up in pueblo, so if your air is thin, some smokers will struggle with keeping the chips/pellets smouldering - what kind of trouble were you having? (many of the board folks are great for troubleshooting issues) if it was a 'fuel seems to keep going out' thing, then an idea I saw some...

    Smoked Caveman

when I've got some disposable income,I'll be getting one of the MES 40" digital that Bearcarver helped redesign for now, I've found the fix to resurrect the analog, so that's cheered me up mightily!

    decisions, decisions.

I decided to give masterbuilt another try, emailed them up, and got a reply - they've opened a ticket on it, and since there's a ticket, that means I can order it from them for 30 and shipping, so that looks like the route i'm going.  I'm pretty impressed with their customer service!

How do you store your jalepeno peppers?

when I have extra (not this year, garden died out from under me) I smoke (160-180F) the beasties over mesquite until they're dry and leathery, grind some up and put in a seasoning shaker and keep it in my pocket. little taste of home wherever I go.

well.. good news - what I thought was one of the connectors for the heating element wasn't - I checked over it, the element's still sound the inside of my controller otoh - looks like this   what it isn't showing is the half dozen strands on the top of the bottom lead are the only ones not...

    Smoked Caveman

My apologies, I thought I'd done this when I was here before, but guess not. My name is Aubrey, but you can call me Ed. (I go by Ed in a lot of online games, and so I respond to that as much as I do my actual name anymore) I live in Gainesville, Texas (76240 zip) right along the red river...

    decisions, decisions.

(makes note of the connection recommendations) yeah, the body of the heating element is alright, but the connection tabs are in pretty poor shape as well, I'd have to basically build up new connections, so I'd feel best on just replacing the whole assembly if I go that route. good idea on the...

    decisions, decisions.

first of all, I'm back! (after 8 years. being married, divorced, losing everything but my shirt and moving takes away from time for the good things in life.) I have a dilemma - several years ago, because of space concerns where I'm crashed, I picked up a MES 30" analog (20070210) and it served...

for those of us with celiac and bread issues....

an update I've been working with a long ferment (2-3 days) wild sourdough, and having good success with it. I've adapted a 'no knead' recipe (the new york times one) and happily enough, eating this bread has caused me very little distress (one loaf that I didn't let work the full 2 days) to...

    Sourdough starter ?

one of the things that helps with sourdough starters, is to add 1 teaspoon of white vinegar to a 1:1 starter (one cup by weight each by volume) of water and flour. it lowers the ph enough that the lactobacteria and the wild yeast (which LOVES the acid conditions) can get a start over the regular...

Bless those Italians.... I apologize for the lab-ese heavy document, but this is very very promising... http://www.ncbi.nlm.nih.gov/pubmed/18680953 here's some commentary about the subject written in a slightly more understandable form.. http://www.foodnavigator.com/Science...en-intolerance...

    Am I Stupid!

not a real stupid question.. what I'd do, if it were me, would be to go out and buy a slab of expanded metal and weld it to the top of your firebox, and then weld 1/2" spacers atop it, so that you can get a little airflow under your brinkman, but still get plenty of heat. that'll slow down the...

Well, I've put it off long enough

bit off topic, but I wanted to thank you for that bit of info.. I suffer from 'perfectionist procrastination' and find that I've got a lot of great plans and don't have a bleeping thing done about them. ain't nothing ever going to be perfect on this little mudball, so make the best of what...
