    Smoked a 14lb brisket in 5hrs...

Well almost.......I tried Ed's (kick *ssbbq)method of fast smoking and it turned out pretty good. I smoked @ 350*-375* for 5hrs and hit 195*. The flat was good but not much smoke flavor. I think this was my fault as I added oil to my spray and I NEVER do this. The reason I did it was to seal in...

    First Brisket?

Just like abelman said some guys do cap up and some down. I do my cap up and I do not trim the cap at all until after it is done. I smoke mine w/ out foil until it reaches approx. 160* then I pan and foil it to 195*. At this point you can just let it rest for a bit and let the juices redisribute...

    Charcoal to Propane Conversion Question

I purchased the "Afterburner" for my horizontal smoker for around $60 and it works great. I'm not sure what your burner costs, but this thing is ready to go. They also make them for your smoker.

    Need Help W/ Custom Rotisserie...

Richtee You are correct, I have not loaded it up yet, not much demand in the winter in OHIO. The smoker is not too big, I think the problem is that I got it in the winter and truthfully have not spent much time w/ it. Sounds like I need to get some thermos, wait for a decent day and start...
