Hi, I'm from north east Ohio. I grill almost every night and smoke every weekend, even through the cold winters here. Smoking is my passion so I thought I would join this forum and meet people with the same hobby to talk about old stories and new ideas to try.
I'm used to smoking 16 to 20 pound briskets so I can't really help you. Seems pretty small to stall though. I'd do like padronman says and keep your lid closed. Like Aron franklin says if your looken you ain't cooken.
Go with an indirect firebox with a thermostat and fan forced draft. You can buy a controller on eBay for about $40. I smoke for 20 hours sometimes and my Omer temp doesn't change more than 1 or 2 degrees.
