    I think I read in one of your posts. That you filled the chip loader 3/4 full. If so that may be part of your smoke problem. I put about 6-8 chips depending on size in my chip loader. They always burn to white ash. Also the lower and slower you go the moister. Good luck and ENJOY!!!

    New MES 40" what about?

    I haved used a combination of wet and dry chips. I have not seen a noticable difference. My biggest question is. Does anybody get the tbs out of the mes? I can control the smoke but it is a whiteish gray not blue.

    Nice job Kevin!! It will be easy to remove. Put pipe plugs or caps on. You will be sealed up again.

    Put the probe in ice water. Should be really close to 32* F. Boil water it should be close 212*F. Depending on altitude it will vary the higher you go. I seen somebody had a chart for that. Where I live water should boil at about 202*F. I have two digitals and while playing I will compare them...

    MES Hot Spot

    I had a couple of pieces of 3/16 steel laying around That I used. I cleaned them up with an angle die grinder. Than did season run on my smoker. It coated them in a nice golden color. They were ready to use with some meat. I have another solution rolling in my head I just need the time.

    steve o, Just did a quick google on Newmon Marinade. Does not look like it has a cure. So definatley keep it refrigarated. Also next time find a jerky mix like High Mountain, Hi Country, Lems. You can find them at Cabelas, Bass Pro, Sportsman Warehouse, King Soopers Krogers or whatever names...
