    I smoked duck the other day. I pumped up smoker temp to 325f. Brought up breast to 165f. All was good. I finished up the duck on the grill to get a crispier skin.     I used apple wood. The wife is just flabbergasted by the results, i had her family over for the feast. I tinkered with airflow, whenever i crack the firebox open, heat iwould rise rapidly to 280. So i left it alone. The valves i have on are enough to control the heat to get it where i want.

    Yes with huge success. A 12 lb brisket , 2 racks of ribs and 6 chickens. I wanted to take pictures but they didn't let me. Everything was devoured in under 30 minutes. They refused to even let the brisket rest. It looked and tasted delcious. The chicken was melting, and the ribs was so tender...
