Smoking Cheese, Taking Advantage of the Early Cold

Looks good Disco, that would be nice on top of a bowl of smoked chili or in a smoked chicken quesadilla....  It got cold down here to, it dropped to just under 50° last night

German summer sausage and Hungarian smoked sausage

I haven't had time for SS yet, maybe next month. I got the electric smoker and pellet tray thing so they could work while I sleep. :)

    First go at cheese

I got the wallwart from Amazon, if you have an old device that used a 12vDC converter it should work.  Goodwill or other charity stores might have them.   I could not resist and I sliced off a wee bit for a taste, it was like licking a wet ashtray.     I had read that would be the result, now...

    First go at cheese

The weather has finally cooled off in the desert so it's cheese smoking time.  Here are pics of my first try, 4 hours with pecan using Todd's AMAZN smoker and the mailbox mod.   Thanks to Dave and the others for the mod info!  Thanks to Mr. T for the cheese tutorial!  All greatly appreciated. ...

I'm still in Maple Breakfast Sausage Links heaven! My Thursday night football sammie......

A nice sammie, but I think it needs a plate of your bacon wrapped onion rings, only fried!

    Funky ground pork.

I have a dedicated meat grinder but I only wanted 1 pound to experiment with.  I never buy ground meats because of many of the expressed concerns and I prefer to pick my cuts of meat to grind. I just did not want to have more than I needed.   The meat did not smell strong when I opened the...

    Funky ground pork.

    Funky ground pork.

I bought a pound of ground pork from the local market to test a breakfast sausage recipe. Once it started cooking it smelled like stinky feet and tasted like it smelled. I am thinking the pork was from an old boar or had a poor diet. Is there a way to avoid this or is it a craps shoot? The...

    Summer Sausage advise requested.

I kinda forgot about Len's site, thanks for the reminder.  That version looks as good as any and I will give it a try.  (with a couple of tweaks) Funny you mention specialty mustard, I just received a few pounds of brown and yellow seeds, making my own is also on the long to do list!

    Summer Sausage advise requested.

I have not made a SS, only tasted the nasty ones from the mall during the holiday season.  So I am trying to figure out what to try first.  I like tend to like big flavours; spicy, garlic, smoke and paprika.  Any protein will do but beef or pork would be easy to start.  I was thinking of trying...

    Tiger sauce

This thread totally reminded me about Tiger Sauce and Pick-A-Pepper sauce, I love both and need to go find some. The original tiger sauce is an exotic, moderately spicy blend of Ingredients in a cayenne pepper base. With a touch of sweet and sour, it's perfect for meats, seafood and poultry...
