I just started using an Old Smokey to get started. Today is my first butt and everything is going as planned. The Old Smokey is working well and keeping a constant temperature. I have read they don't produce a nice bark because it's a sealed unit to keep moisture in.
Thanks guys! I wanted to start out with something simple and did not require a lot of babysitting so I think the Old Smokey was a good choice. Everything looks and smells good so far!
