Hey Steve (enabler), where did you get those fermenting lids for your Mason jars?

    New here from WV

Welcome from Middle TN! Like others have said, fruit wood, and some time to mellow sealed up in the fridge. I wish it would finally cool off enough so I can start on my first batch of smoked cheese.

Favorite Way to cook a good steak

I've done reverse sear on the kettle, the pan sear with the oven finish , sous vide with the torch sear, in my pellet smoker for a while at 180 then sear it, and the lazy "throw it on the gasser cause I'm hungry" method . I can't say any are my favorite, I guess it's a mood thing.

    Smoked Meatloaf

I swear meatloaf is one of those things that went from Zero to Hero just by smoking it. Hated it growing up. Bought a smoker and tried smoking meatloaf. Wow! Now every time I make it, it's gone in a day. Yours looks awesome. I may have to try the McCormick stuff.

YEYYYYY... Summer Has Finally Broke !!!!!!

Lat week was 50's in the mornings, 70's during the day. Perfect. It warmed back up a bit this week, but there is another cold front moving through this weekend. Man I love Fall weather.

What is your SPG mix ratio ?

I mix each ingerdient by weight, not amount. Example. 1 oz salt, 1 oz pepper, and 1 oz granulated garlic. I back off the pepper a tad, and also add granulated onion to my mix. Just the way I do it. I'm sure others will chime in with their ratios.

    Mashed Potatoes

This has been my go-to for a while now. I give credit to the Pioneer Woman. I do not use a mixer. Something about doing that releases the starch and changes the consistancy. Yea, my arm hurts after making these. I also add regular salt on top of the seasoned salt. It's a good base for...

    Have to try it

Over $4 a can at Wally World. I did buy a can, and tried it. When I was a kid, Dad and I would go to Wendy's for a burger and Chili. We still do the same from time to time. I swear the chili from the restuarant was better than the can I bought. Going to need to hit the drive through and...

    New RecTeq models

I second this. I was smoking brats last X-mas eave with my RecTeq and it was 5°. I'm sure it burned a few more pellets than normal, but it did fine.

    New RecTeq models

That griddle looks pretty cool. I have to vouch for RecTeq. I've had my mini (now it's the 590) going on 9 years now. The only thing I've replaced is the fire rod. That thing has been a tank. Also, RecTeq's customer service is above par.
