I'm going to have to respectfully disagree with you on this one. I have a very good set of Wusthofs that were not cheap. Are they better than the brands you mentioned? Maybe not. Are they inferior? Sorry, but NO! I will hold my knifes up against anything out there. I also treat them...
Smoking a steak is awesome. I do it all the time, but I ALWAYS finish with a good sear at the end. Screaming hot grill, blow torch, hot cast iron skillet, or a grill grate on top of a chimney of hot coals.
Could not have said it better myself. My go to is to inject it with a beef broth/wursty combo, and put a Montreal Steak rub on it the day before I put it in the smoker. Once it's all said a sliced, I'll put it against Boars's Head any day of the week, and twice on Sunday!
