I've been thinking about trying that combo of pecan/cherry. My grandson and I built two mini wsm's - I wanted the mini because we have been away from home & my WSM 22.5 Bullet. The mini exceeded my every expectation. Thanks for the comment.

I got started late yesterday smoking a Brisket Flat on the Mini WSM and as a result it wasn't finished until midnight. I made a quick unloaded sandwich for sampling before going to bed. It will be good today with the Brisket Drippings (Au Jus) and with all the condiments.
