    Thanks for the comments and great suggestions.  The sky is the limit on things that one can do when smoking, especially to serve something unique.  The mini is my go to for smaller smokes, but I do a lot of smoking for our church - the last smoke was 60 lbs of brisket on the WSM 22.5" bullet. ...

    I've been thinking about trying that combo of pecan/cherry.  My grandson and I built two mini wsm's - I wanted the mini because we have been away from home & my WSM 22.5 Bullet.  The mini exceeded my every expectation.  Thanks for the comment.

    You're dead on right!. I just smoked a batch of my first bratwurst and they turned our great.  Here are some pictures -- Using Stubb's Charcoal and Applewood. They are done! Supper is served!  Granddauhter's mini spitz always knows where the food is!
