Welcome from Middle TN! Like others have said, fruit wood, and some time to mellow sealed up in the fridge. I wish it would finally cool off enough so I can start on my first batch of smoked cheese.
I've done reverse sear on the kettle, the pan sear with the oven finish , sous vide with the torch sear, in my pellet smoker for a while at 180 then sear it, and the lazy "throw it on the gasser cause I'm hungry" method . I can't say any are my favorite, I guess it's a mood thing.
I swear meatloaf is one of those things that went from Zero to Hero just by smoking it. Hated it growing up. Bought a smoker and tried smoking meatloaf. Wow! Now every time I make it, it's gone in a day. Yours looks awesome. I may have to try the McCormick stuff.

I mix each ingerdient by weight, not amount. Example. 1 oz salt, 1 oz pepper, and 1 oz granulated garlic. I back off the pepper a tad, and also add granulated onion to my mix. Just the way I do it. I'm sure others will chime in with their ratios.

That griddle looks pretty cool. I have to vouch for RecTeq. I've had my mini (now it's the 590) going on 9 years now. The only thing I've replaced is the fire rod. That thing has been a tank. Also, RecTeq's customer service is above par.
