    Smoked 2 chickens, Dutch's "wicked" beans, and some abt's with a mix of hickory and pecan. Eveything turned out great, especially those beans. Cooked these back on 12/21 but had my computer hard drive fail on me and had to send away the computer for a while. So, better late then never. Hope...

    sure didn't save any since i hadn't taken up smoking then. I'll have to keep that in mind next time i trim them. How long should they be seasoned for, about the same as any other wood?

    I've got a little scuppernong orchard in the backyard that's been neglected for a while. Not exactly small grapes and they do have seeds in them. I thinned the vines out last winter so this year i should get some pretty good grapes. Only time will tell.

    How do you keep thermometer dry?

    I've just wrapped mine in foil or tent it over the thermos. Never smoked in pouring rain though, so don't know if that would work.

    I have a Oregon Scientific wireless thermometer and I have had no problems with it. I've had it lose its signal 2-3 times but it usually gets the signal back pretty quick. They are real good investments.

    The skin was pretty crispy. I thought the meat would be a little dry when i first took it out but once i cut in it was real moist.

    Took a few pics of my first turkey smoke. Turned out really good and everyone enjoyed. It was already in a salt solution so i just injected it with some seasoning and tossed in some onion and celery. 8 hours and few beers later we all dug in.

    I have 2 wired thermometers that i use for the meat and a wireless thermometer that I use for the internal temp of the cooking chamber. I just drilled a hole in a piece of wood and place it in the smoker, seems to work real well. No frequency problems with the one wireless, don't know about...

    So i've got the turkey on the smoker right now. Been going for 3 hours at around 300 and the turkey is up to about 150. Does this seem about right?
