Casings?
Vac packed is probably just a mistake. I havce the impression that if someone purchases natural casings from a local butcher((not the ones sold commercially)) they would be getting intestines from a recently butchere animal Rich I have used the ones packed in salt and thought it was... -

Im still trying to resolve a problem
Could you tell me if the natural casings that you used were packed in a manner that allowed easy installation on the stuffer tube or did you have to mess with the tangled intestines that i see in the natural casing packs. My left hand does not have sufficient feel to cope with those tangels -
God I need a smoker for the apt!!!
You ae definitely a professional chef. As for the smoker, you can get one at a vidio rental store. Just tell them you want one about apartment dwellers- scotty

I have the casings that say they are edible and for italian sausages. i am trying larger diameters each time. next batch as soon as we get the corned beef and the pastramis cooked and a few carboys of wine into bottles. -

I have made about 4 batches of italian sausage this year. I use colageen casings and they always split at various pointh in the link when i'm cookong them. We have been very carefull to mix the meat thoroughly and also to avoid overstuffing the casings. I'm using a 1 HP cabellas meat... -
The toy smoker is coming out again
I have been using only one of the 2 shelves. The last brisket i bought was a bit over 11 pounda and if i cut it in half and used the 2 shelves it would fit. I also have the other one that rival sent me when i complained about 1 screw being missing. One day soon i will get 2 going at the...- scotty
