Over the weekend I decided to try my first fatty =) Already planning my next fatty for next weekend.. heh
I started with some JD sausage, mixed in taco seasoning, and rolled it out in a baggy. Then I put a layer of refried beans, some sauteed onions bell pepper and garlic, then some tomatoes...
Hi Wes,
I'm just starting in on a brick/wood hybrid smoker. The firebox is going to be cinder block with a cedar wood smoking chamber above it. I started laying the brick last week and found out that I really suck at brick laying... hah! I'm pretty sure that the mortar joints are too big, I...
I thought drinking a beer after work, or at dinner, or while watching TV after dinner, or while sitting on the patio yelling at the kids to stay off the lawn was the norm... mustaches and beards get a whole month dedicated to them. Beer should have a year dedicated to it..
Year of the Beer! I...

Thanks Dave for the reply!
hah, I was trying to keep it under the fence height... Looks like that probably won't happen now.
I was planning on putting the first pan roughly 6 inches above the pan to give the heat a chance to disperse a little. Do you think the firebox size that I have above...
So, I am thinking about using the brick to make the firebox. Roughly 12" by 12" and about 20" high. I think that I will top it with a poured concrete slab with a 6" diameter chimney hole in it to allow the heat and smoke up into the smoke chamber. I'll use a pan with sand in it as a diffuser...
