    Looks good. Saw your reference to RMB. What kind of smoke wood do you have available in your part of China? I had a difficult time finding good hardwood there.

    No wrap, no spritz, when right?

    The Dino ribs that I buy usually have to go to 207-210 to get probe tender. I give them a spritz and wrap them at around 170.

    I've used a 1/4" thick steel offset for over 25 years. Works fine. I guess it depends on how big of a smoker you are talking about building.

    Wow. I've been through thousands of crawfish and never saw any meat come out of the claws! Nice looking traps. Our traps were much simpler and shallower.
