Thanks to both of you, I have AMNPS raised as you said Richie. Have a slot cut in the door even with the bottom of mailbox that is 2 in. tall and 4 in. wide. Have tried closing off intake to different degrees but not seeing much difference. Yesterdays smoke burnt all the way to the turn and...

Problems keeping amps burning in mailbox mod

I am having trouble keeping pellets burning in my mailbox mod, it is on a fridge conversion. I have a 3 in. exhaust from the fridge with a 3 in. exhaust from the mailbox. Mailbox sets right below the fridge with only an inch of pipe between and enters box in center of the electric heater. The...

    Help with mailbox mod

I am having problems keeping the dust burning while cold smoking at 80 to 100 degrees and a very hard time keeping the pellets going on a regular smoke.  The mailbox is directly below the intake of the smoker, 3 inch from box to smoker, 3 inch outlet on smoker, all wide open.  Mailbox started...

    Problem with summer sausage

Thanks to all.  Don't think there was a spike in the heat as I kept a close eye on that, never more than a couple of degrees difference.  Started smoking at 120 for 2 hrs, up 10 per hour for 3 hours, 180 till it hit target, was this too quick?  The meat on outside of roll is just as moist as in...

    Problem with summer sausage

I just finished my first batch of summer sausage, and the meat is sticking real bad to the inside.  I used fibrous casings and soaked for 1/2 hour as the package said. Had a good tight stuff with very little shrinkage after smoking to an it of 155* over a period of 7 hours and cooling in an ice...

    Maibox mod

When using mailbox mod, what do you use to produce smoke, dust or pellets?  Was hoping to use pellets to both cold and hot smoke, but not sure it will produce enough draft to keep pellets going.  Anyone try this yet? Thanks for your input. Bud

    Help with AMNS

I feel pretty stupid, but this is what the problem was.  The whole AMNS was dirty, you could see through most of the air holes but they were about half way plugged up. I have been wirebrishing it before each use, either I wasn't through enough or that won't get the holes clean.  I heated the...

    Help with AMNS

David. Just dumped the tray about 10 minutes ago, but in looking over the AMNS, I noticed the dividers are almost completely plugged up with tar or something.  I am going to clean the hell out of it and see if that helps with the problem that is right where the unburnt dust is left. Thanks for...

    Help with AMNS

I have been using it for cool (under 120) smoking for the last couple of years with great success, but the last couple of smokes have left a pretty good amount of unburnt sawdust along the sides of the rows. It will burn the complete row but only about 3/4 of the dust. I have tried less packing...

1930's Servel Electrolux Gas Fridge Build. Lots of Pics

I am working on one of these as well.  The complete ammonia unit can be removed as a unit, 8 bolts on the rear and the freezer unit will slide out the rear with the unit.  Mine had cardboard insulation, 3 inches thick, but it comes out very easy.  I am a little concerned with the wooden frame...

    Apple Brats

Thanks for the reply's.  I had the butts thawed out and ended up just doing plain brats and hot Italian on Sat. morning.  I will try all the ideas in this post and report back at a later date.  I have enough sausage in the freezer for now, 'bout 11 lb. of each and 15 lb of breakfast. Dave...

    Pizza stone recommendations?

I have had very good luck just using an 18 x 18 unglazed floor tile from Home Depot, (I have heard the glazed ones have lead in the glaze}  I have cracked 2 in a year, but at $5.00 each it is no big deal.  The last one cracked when a drop of cold sauce hit it as I was putting a pizza in.  I just...

Roller's Amish White Sandwich Bread - Wheat Version Loaf and Rolls

Thanks for the wheat version.  Couldn't have come at a better time, I just said to my wife "Wonder what this would taste like in whole wheat?".  But had no idea how to make it work.  I have made this twice and we both agree it is the best. Thanks for sharing Bud

A few tips for newbe bakers from one

Thanks to all for the tips, and nice comments on the loaves.  I have tried the oven with the light on and it didn't seem to work for me.  I'm with Linguica on the hand kneading, this old body is just doesn't enjoy it at all.
