Howdy, Ricksta!!
The Old Country smokers are made in Mexico and sold throughout the country by Academy Sports. There are a number of different smokers in their line. The Brazos is a 40 x 19 side firebox offset make entirely of 1/4" steel. It is a beast weighing about a quarter ton. The...
Well done, Townes!
You should still watch CL for a good 22.5 Weber or Performer. With a snake ring and wood chunks and a few trial and error runs on setting the vents, you'll come as close to a set-and-forget real smoker as you can get without burning electrons. You get a great smoke ring...
In my post, I didn't mean to criticize the MES 30. I have an MES 40. It was my first smoker. I was just trying to give Townes some options to think about that don't cost a lot of money.
When I first came to SMF I was looking for advice about getting a smoker. I wish someone had suggested...
Howdy, CC!

Howdy, Bluecrush!
You've come to the right place. Look up above and find the thread for introductions and tell us about yourself .... or not if you're a private sort of guy.
Welcome aboard!!!!!!!!
I, too, started out with an MES 30 about 6 years ago. Then I found a Weber OTG practically brand new on CL that I picked up for $30US. That is when I really began to learn about smoking for wood flavor and controlling temps which I found to be far easier than I expected. It also serves as a...
I use a Victorinox 6" curved boning knife for trimming and a Dexter serrated slicing knife for cutting and serving smoked brisket. Each can be had for under $20 US. After a couple or three years, both remain sharp and make good cuts.
I'm coming to this thread a bit late, but I'm going to suggest something a bit different. Go to Craig's List and look for 22.5" Weber kettles. They can be had for cheap - $25 and up. I even bought a Performer in good shape for $175. Using the snake method for a fire of charcoal briquets with...
Here are the results of today's smoke. I had a bit of trouble with wet wood not getting hot enough or holding a heat. Then, the heat ran away with me and got a little too high,
All in all I think it turned out OK. Tasted good too.
Thanks Cranky B!
I gave up on drying the wood and waited until today to light a fire. The splits were still wet but a good briquette bed allowed me to get a fire going. I followed your advice about heating the wood to dry it, and finally got it up to temp.
Here's the seal I was asking...
