    ok, so my IT is 145 after 100 minutes.  That does NOT seem right.  any ideas?  I've tried two probes.

    when you rest it like that, do you have to reheat it in the oven to bring it up to temp, or does it not matter if it's hot?  Or does it just stay hot for that long?

    thanks guys!  I just saw this after I started, so I do have water in there and I have sprayed it with some apple cider / cider vingar / captain morgan mix spray once so far.  I might not spray again, but we'll see.  I'll have a lot of time to try out different ways :) How often should I add...

    if I'm using a MES30 (water pan smoking) do I need a mop?  I figure every time I open the door I lose heat and smoke.

    New 30" MES - got it!

    Just got one for my birthday and got a pork shoulder from my butcher to try out tomorrow.  Have it rubbed with mustard and rub and in the fridge in cling wrap for the night.  Excited to try it out tomorrow :)
