    Thanks. The sauce is made from homemade smoky serrano hot sauce with some added Worcestershire sauce, tomato paste, dash of soy sauce, and pinch of paprika.

    So it sounds like Accent did help to tenderize the sirloin. Surprised sirloin needed tenderizer though. Should help more with your inside skirt, if that's what you got. Outside skirt shouldn't need any tenderizer.

    Thanks everyone. It was mighty good eats. We had a cold front come thru, high of 85, and a burn warning but not a ban. I feel pretty comfortable using the wood fired grill, as long as the winds are not too strong.

    I think you gotta use some chile peppers for barbacoa (guajillo, ancho, etc). And I believe it's either steam-roasted in a pit (even aluminum foil works) or braised in CI pot. Of course you can smoke beef cheeks, which can be good on its own, but I don't know about barbacoa.
