    Am I a traitor, hehehe

Each kind has its advantages: gas is great for set and forget. I don't know how well the offset design would work. There is a gas conversion that has drawn rave reviews from other threads of this forum. Graze around. An offset, wood fired rig is superior for burning fallen pecan limbs, drinking...

    tough cuts of meat

Flash, your Q looks like a fellow could hurt himself w it.....great! While I am in the presence of masters, a question: I can make great brisket, what must I do to do equally well w some of the cheaper roasts? Mine always come out tasting like a roast that someone tried to cook like a brisket!

    need some advice

After buying my Smoke Vault, I discovered a heavier-built rig at Lowes. Don't remember the name, but I would have opted for it. It does not have quite the capacity, but no problem....just smoke more often!

Best smoker under $250 propane or electric?

I have the Camp Chef Smoke Vault (LPG) and am quite pleased w it. This being said, Iwould suggest that you go elec for the following reasons: 1) A propane unit is an attractive home for little spiders and other critters that would clog the burner orifices...especially if the thing is seldom...

    First Smoker

Being cheap, and very good at it, I save used turkey frying grease for the express purpose of seasoning new rigs. Paint it on. If you aren't quite so cheap,or don't have any old grease on hand, lard is your best option.

    Electric Brinkmann for first smoker?

Get the sucker! If you really get hooked and deep into smoking you'll want to play w as many different kinds as you can afford. Have fun!

    New smoker question, ......

I don't have an offset smoker, but I have seen two guys do very good work w one. One used a burn barrel and transfered coals to his firebox. The other burned sticks and used an incrediably small fire. Both used an oven-type thermometer constantly moving it around and knew exactly what temp any...

Saw a stainless steel griddle to be placed on the grill. Had grease drain, looked well made. $49. Anyone tried one?

    hey bbq bubba

Thank you Dude, you are indeed correct re mods... I have already made some of them. I won't argue about one fuel over the other as I'm convinced that each one is better for certain applications and I expect to have the fun of mastering each one.

    hey bbq bubba

Bubba, I, too, anxiously await your reply. I garage-saled a Brinkmann charcoal Gourmet from guy and found it to be a fantastic improvement over my cheaper versions. The guy said he was getting rid of it because he had got the electric version and was forever through with charcoal. I've been...

    Thanksgiving Joke

A lady called the food editor of the local newspaper. She asked, "How long must I cook a 28 lb turkey?" The editor reached for his chart, saying "Just a minute." "Thank you," she said, and hung up. Happy Thanksgiving to all. We are Blessed beyond the wildest dreams of most who have ever walked...

    Instead of a smoke pistol.....

Richtee, that is quite selfish of you. Don't you know that there are most likely many of us that will suffer the same failures? Such input from you could save us both time and resources.

Smoke Vault 18 or GOSM ?

I opted for the Smoke Vault because it is heavier made. I've been quite happy w it. To add to your confusion, Lowe's has a similar smoker that is even heavier made. I think I would have gone w it had I found it in time. As others have said, you can't go too wrong. It's a win-win.

    Customer Complaint

Here is a link to a complaint re Jimmy Dean sausage. Be forewarned, it gets pretty eloquent. It also gets pretty funny. http://consumerist.com/consumer/audio/devoted-customer-upset-jimmy-dean-downsized-sausage-16oz-to-12oz-but-charges-same-price-322223.php

    'splain this

The Brinkmann elec includes lava rock for the fire pan. The conversion kit uses only a plate that holds the element and replaces the fire pan. Why? What difference would it make? I'm much more comfortable w consistency.

    bark on wood?

I've long thought that bark added a bitter taste...particularly w mesquite...but it has recently dawned on me that bark falls off dry wood. I now wonder if it is the fact that the wood is not adequately dried, not the bark that causes bitterness.

And now the Brinkmann Smoke N Grill

Debi, thanks for your comments. I always enjoy your posts. I concur completely w your obsns re height. I am, in fact, using the stand from a fish fryer that is a few inches higher than the stand that came w my turkey fryer for this exact reason. I am not currently using lava rocks, but ceramic...
