    Brisket for a baby shower

That's something I never thought of, reverse sear. I'll have to try that on my next one.

    Remote thermometers best one?

$25 is a good price by my experience. If you get one I don't think you'll give that Maverick any more thought. I do think you can buy probes from them. Last I knew they were somewhere in the $15-$20 range. Why not drop the xtra $5-$10 and get the good stuff? And no, I don't work for OS, but...

    Remote thermometers best one?

I have 6 or 7. Got 'em on sale from Lowe's @ the end of the year. I've used as many as 3 at a time. If you want to use them for grate temp, poke one of the probes thru a potato so that the end of the probe is well exposed and not laying on the grate. If you shop remote thermos, you will...

I like the Oregon Scientific AW-131.

    Brisket for a baby shower

That looks like a pretty good sear so far. What do you do to get up to temp w/ your CG after the sear? The CG's I've used, you had to elevate the fire in order to get good temps in the cooking chamber.

    Remote thermometers best one?

If you read the thread on TVWBB the electronics guys will tell you the exact length and wire guages that it needs to be. From what I read, if the antenna is done right, folks are getting pretty good reception. IMHO the unit is still a cheaply made non user friendly child's toy, and not made to...

    Remote thermometers best one?

You mean it doesn't bother you that it doesn't alert you when you go out of range, doesn't re-register w/ the base when you come back into range, and continues to read the same temps that were displayed when you went out of range regarless of changes in temps since you went out of range. There...

    Brisket for a baby shower

Think of it as a heavy sear, not a burn. Does searing a steak give it a burnt taste? I don't use heavily sugared rubs though a little sugar in the rub is a good thing. I make a mushroom steak rub out of powdered porcini mushrooms, sugar, garlic and oregano. Its fairly heavily sugared but...

    Remote thermometers best one?

And lack of range. Actually, by my experience the entire unit is about as cheaply and un-user friendly made as possible, not to mention that the mfgr won't stand behind the unit.

    Brisket for a baby shower

To fix the uneven heat problem, turn the ash catcher tray in the smoking chamber upside down on it's hangers so that the arch is up instead of down. raise it so that it directs the heat coming from the SFB under itself. If you do this, you should end up w/ no more than 30*-40* difference in...

    ABT trays

I have one of the original Iron desert chile grills. I've bought a couple off brands and one of them didn't have large enough holes. IMHO, I think a fella needs to have 2 or 3 so that no matter what size the peppers arem he'll have a good fit. Besides, a guy can never have too much cookin'...

Where to get good lump charcoal?

The #1 rated lump on Naked whiz is Ozark Oak. Royal Oak is rated 30 something. The folks @ Ozark told me that they private label for Best Choice, but I've been told that Best Choice also puts out a south American lump. All S. american products that I've used or read about spark like he...

    Brisket?

I see points around here from time to time as well as flats. The 12-14# range is what I like to use as well. Hey Chris, did you ever use smoke chopped brisket and PP in regular red chili? It's great.

I fought the brisket and the brisket won

No toes squished here Ken. Who knows, you might try it and decide you like it better the other way. I learned the basic method from an old black man about 25 years ago and haven't done it any other way since. The concept is simple. Which tastes better, a seared steak or an unseared steak...

I fought the brisket and the brisket won

If you tried it once, you'd likely change you mind. If you don't know anyone here that does it, you ought to take a poll. Do you know Peculiar Mike, Dutch, Richtee, Kewel Steve, to name a few?

Anybody know anything about smoking w/ red maple as opposed to hard maple?

Crunchy Skin on smoked turkey or chicken?

We smoke @ 275*-300*, usually do splits, and we always get crispy skin. It would also be easy to fire up a gas or charcoal grill and give it a quick crisp if it turned out too rubbery.

    "OTBS"

Where is the OTBS roster? I hate to be so ignorant, but I wasn't around when all the new OTBS stuff came down. I personally don't feel as though it would be a bad idea to post the squires list.
