Mornin Ray, great job on the smoke house! I showed it to my wife and she said it was beautiful! A few sheets lattice on treated 4x4's put in the ground with flowering vines would dress it up some. Just a thought.

I do the dry cure also, and there never very much if any liquid in the bag. As for the pink part, I'd do like the other guys suggested and trim it off. In the future if you don't already do it, move the meat around several times a day while it is curing. Good Luck!

I bought the same unit a few months ago and love it. One thing I did do when putting it together was to pull the access door in the back and check the wiring connections to make sure that they were tight. They were.

I have the 732 and it does a great job. It is one of those things that like Jeff says, if you don't read the instructions it might not seem like it is working right. Good luck!
