    Looks tasty... I always do my deer sticks this way and add pound of ground pork to every 4 pound of deer. Always work out great. Why stuff casings and such when theres no need

    I tried smoking dutches bean recipe and it didn't seem to absorb smoke much... Granted I didn't follow his recipe to a t. I also used local beans Hanover foods homestyle baked beans. Now don't get me wrong I loved the beans but mines well put them in the oven and add more meat to my smoker haha.

    I pulled it off at around 170 I had about a 3 degree difference between the point and the flat, flat was lower in temp since I had the point towards the heat source.     I having been using Kingsford original. Seen where people said lump holds higher temp however I haven't needed or attempted that yet. The only thing so far is every 6 hours I clean out the ashes to make sure my air flow is good and with that no real problems with temp. Pick up  cheap fireplace...

    I have an ok Joe highland, I tried logs too... didn't like the outcome if they catch a fire, it heats up way to much, I chucked my logs now like you can buy in the store with the saw. Add few pieces here and there and went back mainly to charcoal as said above. Works great.

    Kinda got worried from earlier because the fat on top was breaking down and looked odd, added a grate underneath the brisket to keep up away from juices, and I think it is starting to look better haha...

    I looked at the website, they actually have bison recipes, one for bison beer braised brisket, they sear the brisket for a few minutes each side then bake for 3 hours.
