Don't make tea much any more but when I did I did 4 gals at a time and it would keep for up to a week in the fridge. Always used the large Luzianne bags.
Friend of mine used to add a pinch of baking powder to her gallon jugs, swore it kept the tea from getting cloudy.

Haven't done it yet but have brewed beer using Peat smoked grains. The grain used in good Scotch Whiskey is smoked with Peat.
