Well.....I finally broke down and bought one

My brand spank'n new MES40 showed up yesterday. After putting it together I hauled it up to my deck and plugged it in to burn it in. I set the temp to 275 and my ET732 was registered 290. I believe in my ET, so I kinda figure my MES gets hotter than it's suppose to get. There's gonna be a...

I have been very skeptical of this smoker from some of the feedback, but the positive outweighed the negative, so I'm going to break down and get me one. Why should I can?

I have a couple of crab apple trees in my yard and have put up jelly. I got good garden beets given to me and I canned them. Are the problems with the MES 40 a real concern???

Dave......#1, my sausage smoker came in with a twisted door that will not close completely shut, but live with it. And then the temp control drives me nuts. I turn it on to bring it up to temp, and maybe I need a liitle higher temp., so I turn the knob up a bit........and I loose temp. Then it...

    Tough as leather skins

I have been grilling spuds forever. About 400 degrees, coated with good ol'bacon grease, with salt, pepper and onion powder coating. All in about 45 minutes. Yesterday I tried smoked spuds. Temp was ranging 220-250, and smoked for a little over 2 hrs. This was more or less an experiment, and I...

    Threading casings

Al......Sorry for the confusion,,,,it was to rinse the center with the fresh water, that's where my problems began. I rinsed them in cold water, then had to fight to get them open to rinse thru the casing.

I am new to sausage making. My son and I made a garlic sausage today but my question at this time is........is there a secret to threading the casings onto the stuffer tube?????? Once we got the casing opened it wasn't bad.....but finding the opening was the chore. A real pain. Is there a...
