My UDS is basically finished. I'm just waiting for the grate to arrive (ordered a 24 1/2" grate since I working with an 85 gallon drum). Yesterday I purchased a 12" Eastman Outdoors deep fryer thermometer. Planning to use that so as to get a temp reading just under the center of my cooking...
To further complicate things, it appears that these drums are 85-gallon salvage drums. Bigger drum, bigger smoker I suppose, but what do I use for a cooking grate then?
So my local drum reconditioner turned out to be a dud. When I finally picked up my drum (which at $40 was no great bargain anyway, but at least I figured I could build) and opened it up, there was a liner. Grrrr. Back to square one.

I'm building my first drum smoker this week and I want to make sure my smoke technique is correct. I've gathered that a guy should use lump charcoal instead of briquettes, so I bought some Royal Oak. I've also gathered that I should fill my basket and then get a hand full of coals...
That's a killer price. I have a Genesis E-320 and love it. It was my first Weber grill and I'll never buy another brand of gasser. So much better built than my previous brinkmann stainless. For $199 I'd have to get a Spirit as a spare, though my wife would prolly kill me for it. :)

There is insulation in the sides of the cabinet, but I've drilled through to install a cork piece that allows me to run my probe in through the side . . .

Finally found what I've been looking for . . . it's not free, but there is a drum reconditioning busines in town. I can buy a reconditioned open topper for $40. Time to build . . .
My guess is that the larger cover is based on the 40" MES. The smaller one sounds like it will fit the 30" fairly well, as long as you don't mind that it could be an inch or two short and thereby wouldn't wrap around the bottom of the cabinet.
I still haven't had any lucking finding anything...
So how do all of you "Drum Heads" clean the ash out of your drum? I've read that some put a pan under the fuel basket, but it seems like it would be difficult to reach and lift out without dumping it. I've always figuerd I would just use my shop vac to vaccum out the ash.
That's a good point about a closed top drum probably not having a removable bag liner. Damn. I wish I was in a bigger city where a better drum was more readily available.
No matter. I'll keep looking and find one here eventually or I'll just end up ordering one.
