Pellet Smokers in Competitions - Your opinion

Guys, the rules clearly allow one to use a pellet grill....no one is cheating in these competitions. So sayeth the judges. This kind of reminds me of the first time a forward pass was thrown during a football game. It stopped the play for some time, as the other team yelled "foul," right up...

    sliding convection plates

The plate can be positioned wherever needed so that the desired temps on both sides of the cook chamber can be achieved. This may or may not be the same temp for both sides. There are many situations where one would want a considerably hotter environment, or maybe just a little, on one side...

    kamado guys opinions needed

I purchased a ceramic cooker and have not used the Weber Genesis gas grill, since. We now have four of the ceramics......and the lonely gasser.  I actually did fire up the gasser a few months ago, just to see if it would still ignite. After several years of living unused and under a cover, it...

    Charity rib cook-off

Correct on the loading. I always use chunks of wood when engaged is a lengthy cook; they last longer. Lump can be started in a chimney but we normally just use a propane torch (or a Looftlighter) because we only want to ignite a small amount of the lump, in the beginning. As the cooker comes up...

    Charity rib cook-off

The BGE will hold enough lump that running out of fuel will not be an issue. Control the cooker temperature with the (mostly) bottom vent: it is surprising how small an opening will give a good smoking temp, less than 1/4 inch. Be careful in the placement of smoking-wood as the way these cookers...

Some of you guys might really enjoy the book "Cooking with Fire," by Paula Marcoux.

Proper smoking proceedure when heating/firing with wood (no charcoal)? Using an UDS.

777funk, if you build a really big fire, the result will be a really hot cooking chamber...something you don't care for. If you build a really big fire and then add a whole bunch of wood to it....it will just get that much bigger and hotter. If, intending to keep all that extra wood from...

Im buying a new smoker: recommendations?

We ended up going with a Yoder YS640 and have been well pleased. Compared to our Large-sized BGEs, this thing is huge...I can't believe how much real estate it has. Oh, and it's operation is so easy as to be almost boring, but the food coming off is terrific. Although the Grill-Grates were...

    I'm at it again.

I cooked my first brisket over the New Years weekend. A 17lb, choice full-packer was placed on the Yoder pellet smoker, fat cap up, at around 180°F for a few hours, as I have read that pellet smokers actually produce a rather light smoke as the cooking temperature is increased. A pan of water...

    Yoder Smoker

I had the opposite problem: the local dealer, one from whom I've purchased many grills and smokers, seemed to have traded real salesmen for some lazy kids. I simply could not induce them to stop watching the game on a TV and help me. I called Yoder direct, explained my problem, and was met with...

Maybe you could be a bit more gracious concerning her well intentioned gift. The fact that the meat is doo doo is beside the point. Good luck.

    2 smoked chicks on BGE

Be careful with the BBQ sauce. Any variety containing much sugar can start to burn pretty quickly: don't turn your back on 'em when placed on a high-heat grill.  Many folks cook chickens at 275°F-300°F, which can give a good cook and still have enough heat to crisp the skin.

My new Big Green Egg excited

slimc, Yes,  a spider that is intended to be used in a size Large BGE is designed to suspend the factory-sized cooking grid that would normally be used in a size Medium BGE. There is a necessary loss of grid diameter involved because the spider sits so low into the fire ring/box of the BGE...

My new Big Green Egg excited

The thermometer is in the lid and well above grate level, so one would not expect it to read the same as one placed considerably lower.  If you have not done so, go to ceramicgrillstore.com and take a look. They manufacture a whole lot of very high quality accessories for the BGE.  I...

    Seasoning a Smoker???

On our offset, I first wiped the inside, then coated it all over inside the cooking chamber with cooking oil. Having gone to a butcher and gotten several pounds of pork and beef fat trimmings, these were placed on the food racks. The smoker was then run at around 300-325°F for about four hours...
