    New kettle Q

I have a weber  compact and it's 47cm, probably would feed 4 people with 4 steaks etc. It's great for firing up in the week or at the weekend, usually ready to go with a chimney starter in a quick amount of time. Would recommend it.  I have used mine about 5/6 times and never had a problem !

    Brummie Smoker New Guy

That more than helps, will probably get the meat on the smoker around 11 and then see what happens. It's not imperative to finish at 7 but it would help, don't mind watching the game whilst eating anyway ! Just checking IT means internal temperature ?

Cool.  Also interested in the 321 method and if it's worth going for ? The Mac's BBQ recipe is 8-10 hours cooking time which is 4 hours less than the 321 method !

    "Dismantable" Pizza Oven

My pizza oven is made from cob (it is an earth oven) - as the door remains open we cook on heat which has soaked the cob, it's door is 60 cm high so that the smoke comes out. We get pizza done in around 1.30 minutes and have to move it around 180 to stop it burning.

    Belly pork ribs

The Wellington is a very special pub, what I like and always state about that pub is the fact the pub is designed for very few things, drinking and chatting. No TV's apart from the order TV, a good selection of beer, tables to chat, places to sit on your own and places to sit in a group - no...

    Brummie Smoker New Guy

Evening UK Smokers.  Ordered my first meat from the butcher, decided to stay local and use my organic butcher in Birmingham. Originally I was going to feed my 2 brothers and nephew but my middle brother won't make it so it's going to be just me and my brother/son for beef ribs on Saturday...

    Online Meat Recommendations

Thanks for the advice and guidance Kiska, I am primarily looking for organic meat at the moment and for me personally it is not just about flavour but also making sure the meat I have eaten is organic and well reared.

    Online Meat Recommendations

I suppose we could keep it topped up by putting purchases and purchase reviews in.  The ribs I have found http://www.graigfarm.co.uk/organic-produce-c1/beef-c2/graig-farm-organic-beef-short-ribs-jacobs-ladder-p1036 look surprisingly cheap for organic meat.

    Toy

Just got mine last week. Have had 2 dry runs, one for seasoning and go full pelt and the second to mess around with the air inlets to do some mock temp control - was so amazed on Friday on my second seasoning how it held temperature, I know I am new to this but still it was very impressive. Was...

    Online Meat Recommendations

Just a thought, as we are building a recipe directory - would it be good to have a online meat directory thread ?  http://www.graigfarm.co.uk/organic-produce-c1/beef-c2/graig-farm-organic-beef-short-ribs-jacobs-ladder-p1036 - I am buying these next week for a smoke next weekend, can leave a...

Yes noticed a dude on instagram doing the same, will do that too. My meat probe was bought from Amazon and was on special offer  for those that might be interested.

    Brummie Smoker New Guy

Me again, sorry to keep asking - I bought a meat probe yesterday but also did not consider a grill thermometer - any recommendations ? I used to use a simple oven thermometer which had a clock dial on it that cost me £5 from a kitchen store, was thinking perhaps that might be an idea and to...
