If you are going to foil the shoulders, and I would suggest it to speed things up if you only have a half day, just put them in foil pans, or put the foil pans under them to catch drippings. Then at foil time cover them in the pans well with foil and cook to final IT. You are planning on pulled...
Smoked up about 13 pounds of cheeses in the MES last night.
Didn't have room for the Gouda, oh well I still have some left over chilling out since March. It will go in on the next round.
2 hours in hickory, rotated the trays bottom to top every half hour and flipped everything over after...
I use traegar pellets, mainly b/c it's the only pellets I have easy access to, also price is good. The apple is harder to keep lit by itself, I usually mix with pecan, and hickory burns well.
Line the bottom of your bowl or whatever you microwave them in with paper towel. In the summer I noticed condensation under the pellets when I nuked them, the paper absorbs that. Also get a heat gun and after you get a flame going hit it with the heat gun until it's a roaring inferno. Works for...
I get a small flame going with a torch and then use a heat gun on high and it takes me about 30 seconds to start the pellets into a 1 inch long coal bed. You can really get a roaring fire, it warps the metal on the amnps it's so hot.
Black rain, I like it!
My own thoughts, steam inside an electrical box also seems a bad idea to me, especially with many many stories of electrical connector issues and corrosion with the MES. The box is not watertight.
My own experience, I never used water in the pan from day one. I did a...
AJ, toast and eat the whole thing, it's just easier! You can also simmer the seeds in salted water for 10 minutes and that will get some flavour deeper into the seed as well.
My son carved a small pie pumpkin tonight, and since it only had about two handfuls of seeds I tried a small smoking experiment. I cleaned the seeds and gave them a light toss in olive oil. Then spread them out on my salt screen and cold smoked them for an hour with hickory in my MES 30 w/...
It sounds like you're probably not getting thin blue smoke from your setup? Is it more white and thick/billowing? What kind of wood are you using and is it chips/chunks/pellets/dust? And how are you burning it, I am assuming you are starting off using chips in the stock MES chip tray...
My .02...
I don't think 80* is too hot, it's on the upper end but my cheese has gotten that hot with no ill effects. I think 70 or less is just about perfect, my best cheeses are smoked in winter. The problem I have found when cheese gets too hot, like 90-100*, is it melts and then gets a...
Order an Amazen pellet smoker and get yourself some sort of box - carboard would work, BBQ, filing cabinet, etc and cold smoke outdoors. Its easy and cheap and dopesn't take much space. I've never did or heard of smoking mushrooms (OK I have heard of people smoking mushrooms for other reasons)...
Mine arrived in WAY worse shape than yours, it likely left the factory fine but was damaged during shipping. Mine looked like it was dropped off the back of a truck - the feet were bent sideways, the door was broken off and a huge crease in it, the back and sides were all caved in and dented...
Do you mean inside as in your house? I would say thats a bad idea unless you:
A) love the constant smell of smoked meat permeating the couch cushions and bed linens, or more importantly,
B) Your spouse or siginifcant other loves the smell of smoked meat permeating the couch cushions and bed...
Looks good and good job for a first smoke with the new MES, it is so clean and shiny inside, hopefully that doesn't last too long. What temp did you have it set at? Swings are normal with mine, you can minimize it by filling up your water pan with clean sand and wrapping it in foil, with that...
If you are certain it's powered properly, did you set TEMP and TIME? MES won't heat unless the time is selected, both hours and minutes. If you say it appears new in box I doubt very much the controller is shot from the factory...maybe it was fried when it first powered on with incorrect...
You won't be able to anchor screws in the sides, it's thin 1/16"? sheet metal outside same interior and polyurethane expanding foam insulation. Maybe drill through and use large washers inside? Still I think you will get some bending and bulging.
You might be better off tying the ends of some...
Larry, when I was tweaking my setup folks here were very helpful: http://www.smokingmeatforums.com/t/164173/mes-30-mailbox-mod-help
I torch my pellets for maybe 15-20 seconds just to get a small flame and ember going, and then I use a heat gun on high to ignite the pellets to a raging...
