New smoker is kicking my but!!!

So I got a new smoke hollow 4 in 1 from sams the other day. Today is my third smoke on it and I can not for the life of me get the temp to regulate. I am having 30-40 degree temp swings. Does any body have any tips or advice on this smoker, or smokers in general to help me regulate the temp? The...

    Beer can chicken with Q-view

So my wife said she wanted some good smoked chicken so... 5 lb bird injected with Cajun Injector Butter Creole. 1/2 can of Bud in its butt and on the smoker at 300 degrees. I was shooting for 325 but for some reason couldn't get above 300 oh well. Just a little over 2 hours in the smoke and it...

So we had the brisket for dinner tonight and I must say it wasn't bad. It was a little dry but had good flavor and was very tender. Thanks to everyone here for all your help and support.

Well after 12 full hours it hit 200 degrees. After an hour resting I sliced it, you can see below how it looks. It has decent taste, but nothing to write home about. It's kind of dry, but very tender. That is the beauty of smoking meat...you can eat your mistakes. Oh well maybe it will be better...

It was off by about 20-25 degrees. I did not have a thermometer in the brisket to start with. I checked it at about 5 hours and it was at 140 internal. I did inject it. It is funny I foiled it and moved it into the oven about 1 1/2 hours ago. They have already gone from 158 to 192. Not really...

So I give up. I pulled them off the smoker at 158 degrees and 11 hours on the smoker. Foiled them and into the oven...we will see how it goes.

So after some investigation I think I figured out that my chamber probe isn't correct. I changed thermometers and it was about 25 degrees low. I have adjusted the temp and the temps of the brisket are climbing. Now my question is is the meat ok to eat? It has been at the low temps for a long...

So riddle me this. 8 lb flat cut in two pieces to fit on my small smoker racks. Put it on at 7:45 am it is now 3:00 pm and one is at 145 the other is at 130. Been holding temps between 230-245 according to my mav et-73. Does it seem like they are cooking really really slow? I would think after 7...

This truly is one of my favorite parts of smoking meat. Up early in the morning, everything is quite and calm. There is something very zen like once you have the meat on and a good cup of coffee in your hand just watching the TBS come from the magic box. Alone in the quite, just me and my...
