Use "Merchant Couplers" for your thermometer holes. Typically Ace Hardware stores carry them. These are smooth like pipe, and are eaier to weld. You can cut one coupler in half and have two ports for each piece. Also keep an eye on location. You want them fairly close to the meat level of...
It's a lot of work building beasts like this.. I feel your pain on running out of supplies. I have made my share of runs to get welding supplies like that. Look forward to the progress!
My only concern is the expanded metal on the airflow end of the smoker. A lot of smoke and heat travels on that end on it's way back towards the exhaust. Disturbing the airflow with a grate like that could have a less than desired affect. JMHO
It will be a beast! You will have plenty of room for three rack levels. I would insulate the firebox to help with fuel efficiency. If you need any dimensions or help, just send me a PM.
Those look like they are in good shape.. No real mystery to reverse flow smokers. Just clean up those vessels. Measure and figure out the size firebox and exhaust stack with a smoker calculator, and get to work! I'll keep an eye on the thread, or feel free to email me if you have questions...

or just use the calculator as if it were a complete piece of pipe and then divide by two! I agree the inlet does not look large enough. If you are below 4000 feet, I would go with 1.5 time the area of the exhaust pipe. area of the exhaust is calculated by Radius x 2 x 3.14

You might consider some sort of baffles so that the guru's do not blow directly on the fire. Quite a few competitors around here stopped using guru's because it sent ash through the smoker due to the pulse action of the fans. It affected the flavor and their scores.
I feel your pain man. We are starting the build for our teams new competition smoker here in the next couple weeks. Not looking forward to that bill. LOL
