    Basque Lamb neck chops .

I tried to answer as best I can.If you looked for "best end of neck" that would be a good start. Thats the British tradition but you see it used in all sorts of farmhouse style dishes. I have posted a lot of lamb dishes over the years .The Moroccan tagine I have done with shanks will work with...

    Basque Lamb neck chops .

Its the last couple of ribs cut as a chop then the collar cut crossways. Best end of neck it used to be called back in the day. I am not a butcher & its a long while since I helped out when we processed our own animals back in the day. The actual neck can just be cut into equal pieces with a...

    First time trying lamb

I don't know that sausage, but there is nothing wrong with shoulder especially if you are grinding it. Save yourself the $ . Leg was traditionally sunday roast down here when I was a kid. I prefer shoulder for a lot of things. It gets a bad rap because its cross cut on the bandsaw & when grilled...

    Basque Lamb neck chops .

They are meaty! The fat is more between muscle than over the outside so I won't trim them.I can skim fat off the top before serving. Other ingredients are, sherry vinegar, sugar, anchovies, chicken stock, cinnamon ,fresh rosemary, fresh mint. I have never eaten a cooked radish! The recipe has them...

    Basque Lamb neck chops .

I am putting this here because its not smoked & its a secondary cut. Its a cut that used to go in Irish stews & Lancaster hot pots or whatever a stew was called in your language of choice. I will get a picture up shortly.Up at the local they must have been breaking up lamb bodies this...

Smoked Lamb Shoulder for Pulled Lamb

Batchelor chops, cheap & chewy when grilled. If you can get neck chops ,from the ribs up the front they are a real good thing. I sometimes do shoulder as a braise, very low ,slow & wet. Bone will pull out of it easy. Garlic, white wine, onion, celery, stock, then fresh mint & peas always a crowd...

Rack of young goat ,Malaysian (sort of)

Sometimes I fry the rub off for a few minutes to release the aromatics from the curry powder. Other than that I just tinker with it to turn it to  'jerk"  '

Rack of young goat ,Malaysian (sort of)

Both rescues from pounds in country towns. My backyard looks like a war zone all  holes & wired off sections. I ordered baby goat at my local a week ago.It was owners grandmothers recipe. It was really something Southern Italian but no tomato.I worked out enough to replicate it. Linda won't...

Rack of young goat ,Malaysian (sort of)

Glad you all liked the look of it. It's a milder taste than lamb as long as you are getting young goat. Its also not as fatty. It can be a little chewy if grilled or smoked. Low & slow in the oven or stove top with lots of herbs, garlic, white wine is a great meal same with a curry.

Rack of young goat ,Malaysian (sort of)

This was really nice. The tail on the chops where it became flap was a little chewy but it was tasty. Rub worked, curry leaf is really distinctive & aromatic. Its a very Southern Indian,Sri Lankan ingredient.  I had it with my sunday night allowance of 2 glasses of red wine. This a blend of...
