I have no experience in a smoker, but in an oven I would bump up the heat to start off with and then lower it to the normal cooking temp. I'm not sure if this is possible on your smoker though.

I tried and failed to find any info on meat to bone ratio (large v small birds)
I would guess that larger birds have more meat % v bone, per bird, but that's me guessing.
I don't know if anyone else has any thoughts.
I guess then you have to ponder, is the flavour the same and such like.

I'm going to smoke my Dad's chillies if and when they turn red, he has about 6 varieties.

If you think you have taken advantage of him then I agree, you should make it right. If the roles were reversed and you were the one selling the mixer, what would you have let it go for? Just my 2 cents
Hiya eight433, looks great, I made a smaller / similar one, yours looks the business. I don't think I had the air pressure that yours has, I was using an aquarium pump, like you mentioned, but couldn't get enough air through.

Hiya Xman, not sure what you would call it over in Sicily, Italy, could you get it online? The paint we get over here in the UK would be high temperature engine block paint.
