    I don't normally add any sauce or cheese to the burger till like the last 20 minutes.  Wouldn't want to block the smoke flavor. :-)

    I'll sometimes mix in some montreal steak seasoning when I'm making the burgers.  Sometimes just some chopped jalapeno and garlic.  Most of the time I'll just patty them up and sprinkle on some seasonall or lowreys.

    It doesn't look any different than regular pie.  When I put the filling in the pan, I leave it on the smoker for an hour or two then put it in the pie crust and cook it at as hot as I can get the smoker.  Today was about 350+.  That's why I put the pie up on the grill wok and rack, to get it up...

    personally, I would forgo the grate level therms and invest in a quality digital thermometer with multiple probes.  When I installed grate level therms they would sometimes hit the meat if I was cooking a lot of food, thus rendering them useless.  They were short 2-3" thermometers.  At least...

    upright or bullet smoker vs. barrel off-set smoker?

    I love my new Weber Smoky Mountain.  It is superior in every way compared to my old Brinkmann S'nP.   I have a couple of charcoal grills already, so not being able to grill on my WSM was never a concern.

    I know...it was a bit of a let down.  Before I knew it, we'd decimated most of the fatty and all the sides, what was left was not picture worthy.
