    You could always do what I do and that is food saver it and then throw it in the freezer.  It's not like straight off the smoker but still pretty damn tasty. Just a thought

    Todd you think that a 10 will only take four hours.  If that is the case then that works perfectly.  I usually dont use much hickory just enough to get it going and then cherry on top

    Most of the ones that I have done have averaged around 2-2.5 hours depending on cook temp.  All I put on mine are SPOG...salt, pepper, onion powder, garlic powder. also depends on what temp you are taking them to.

    I have been without mine for about a month now as I am in the middle of transferring from Italy to Charleston.  A couple more days and I am going to finally be able to use it at my parents to hook them up with some smoked cheese.  Can't wait!!!

    Well thanks for all of the advice....however I went to a small range to day and tried a few different ones out and the one that I liked the best was actually the Springfield xd40.  I am about 99 percent sure that is the one that I am going to be getting.

    Sounds to me like you need to try and experiment with a small piece of something and let us know the results.  If I still had my smokers here I would give it a try but they are all on the way to Charleston.
