Easy as pie - no, really!

looks dang good to me, bigfish! i didn't mash the blueberries, but the raspberries, being frozen and then thawed, were pretty well mashed - i am sure that this helped hold the filling together. Ii might be worth it to mash a few of the blueberries, but my guess is that you shouldn't need to...

    Pesce in Crosta di Sale

thanks to everyone for the comments etc. the beauty of this method is that it costs almost nothing, yet it yields huge results in presentation and flavour! i'm guessing everything needed is probably already in the kitchen and pantry. a few eggs, some salt, and some fresh-caught fish ~ that's...

can i use brown sugar in leiu of turnbinado sugar for rub??

it might work - in my opinion nothing can really substitute for paprika. you might try a small amount of crushed red pepper or chili powder. i would be reluctant to use a commercial rub, since it would have a lot of extra salt.

the ingredients you are missing shouldn't be too much of a problem. try to get a little spice in there, if you can (black pepper).

    Horizonal Offset Smoker Mods

    >>>I don't seal the grill. My rationale: everyone is making chimney mods to bring it down to grate level. So then... what exactly is the difference between a bit of the smoke leaking out the sides at grate level or not? If cold wind were blowing in those side gaps I could see it being a problem...

looks and sounds really good, guys ~ yep, stock is ALWAYS the best way to go, i agree 100%. turkey preferred, of course but we never seem to have any around when we need it, so we go with the chicken stock or broth, which is almost as good. never any giblets for us, and even though i like...
