Gary,         That's a mighty fine brisket! I should be doing one this weekend. Hope mine turns out as good.  Joe

How did you come up with your screen name?

Bear,  Thanks. I thought that was high myself but I was in a hurry and probably cooking more than smoking with too high a temp in the smoker. I'll go slower next time and also reduce the final temp. When I go smoke slowly it always turns out better. -SS

How did you come up with your screen name?

How did you come up with your screen name?

Slow Smoker seems obvious but I have to confess to a few failures when I have tried to speed up what should always be a slow process. Brisket: Breakfast of Champions!

Kind of. Several years ago my weight was getting too high and the Doc said my glucose level was too. I really hate diets but I read the Atkins book and decided to try it. It worked for me but an additional positive side effect was I lost the rollercoaster daily feeling of hunger. My blood sugar...

Neither snow nor rain nor heat nor gloom of night stays these smokers and grillers from working up a masterpiece!

Prime Brisket on the Smokin-It #3

Can't wait to see the final product. My butcher shop flat was $77 for 9.23 lbs but I didn't have to remove any fat. What kind of wood are you using?

    Best Steaks Ever!

When I’ve made my mind up to grill or smoke weather doesn’t get in my way as you can see. A friend suggested I try throwing a hickory log on the charcoal to improve the already great taste of my steaks. I did it here as you can see and these rib eyes turned out terrific. Honestly, they...

    Brisket: Breakfast of Champions!

It's a lot of time on the road but it gives me time to plan my next smoking or grilling. On this trip I was able to order a Maverick ET-733 thermometer.
