    I have read about people just wrapping wet chips with foil paper and poking holes with a pencil to them. Maybe you could experiment and see if that changes / help with your ecb.

    Something that hasn't change; el cheapo is still the cheapest smoker out there. Is the entry level unit, people go from there to the WSM, or they turn to electric.ECB is fun for some time but then, well, life moves on.

    That's the myth. I have tried both and see no difference. Also the water pan is a heat sink, supposed to help keep temps steady when doing low and slow. For the turkey I need 325-350 so I am good without water.

    The similarities between both ends with their look. WSM temp control is way better and easier than any modified ecb. Still we can get great cooks with an ecb.
