Bark on meat with electric smoker?

Is this what yours look like ?  This is a small bone in butt.  Normally I rub then let sit overnight, found that a lot of the rub (lots of brown sugar), it melts and ends up on bottom of wrap.  I normally dont add any more rub too it.  I am cooking an 8# for Friday pitchin,, going to go light on...

    Ordering a Maverick

I am hoping,, though,, I have concerns now about water getting on the inside of the double walls.  I am going to look for a 1" and 1.5" elbow,, either pvc or steel, prefer steel.  I think a 45 degree for input would be perfect,, threaded then I can get it in far enough to where it seals both...

    Mod to MES 30 ?

Dinner is ready :) Only had a couple hours to play around once I did case mods.  But some thick cut pork chops,, my version of cheesy potatoes,, some home made sweet cream corn n a smoked tator.  I do have to say,, I notice a big difference in smoke flavor,, not heavy but good smelling/tasting...

    Mod to MES 30 ?

Those 2 vent holes are doing wonders.  I have a little TBS going in the smoker,, some coming out top vent and little magnets seem to be holding up to heat and not sliding off the holes.  Both new vents are 1/4 covered.  I just added my version of cheesy potatoes to the mix.  Little 5x9 pan...

    Mod to MES 30 ?

Mods complete on analog MES 30 With the AMNPS ordered and Maverick 732,, I figured it was time to try to mod my old style MES.  I am a computer geek and noob at most stuff.  I did try and took 2 years to modify an old sitting room into a kitchen, (qview included),, I did all the electric...

    Ordering a Maverick

Another vent question :)  Looking at the case this morning and pork butt sitting in fridge, had an idea.  If I drilled some holes for vents,, I could use a fridge magnet for a vent cover maybe.  It holds onto the side of the case well enough and is easy to slide around and cover vent holes.  My...

    How To Clean A Squid

I am only one in the family on both sides that loves cephlapods.  Agree that a good flash frozen one is the best we can get in midwest, they just dont ship well.  I miss the old Navy days in Italy,, standing on piers with the old men and a couple bottles of wine,, we would just stand there n jig...

    Ordering a Maverick

That looks easy enough to do.  Thanks for the link,, I had looked before for pic but couldnt find it.  Order has been placed for 732 and AMNPS pkg #3.  Looking forward to some smoked sharp cheddar.  Cold smoking will add another whole world of smoking to MES.  And a thanks to Roller for the mod.

does anyone use store bought rubs or spice or BBQ sauce???

SBR for us in general use.  I add diced onions, garlic and a touch of diced jalepeno's if I am going to  be basting something.  Rubs we just make ourselves.  So many recepies to try ;)

    Ordering a Maverick

I plan on ordering a 732 from Todd tomorrow but...  While I am browsing site :)  Was wondering if it would be worth my while to get an AMNPS package too.  I have the older style analog MES, no vents except drain hole and small hole in back for probe wires.  I have read most of Todd's comments on...
