those look very good, the way i do beef short ribs is to sear them, smoke them about 2 hours or so at 275 and then foil them to render most of the fat out. i usually put them in a foil pan to do this. the bone usually comes out by itself. so you can imagine how tender they are at this point...
i always rinse everything i cook in a water and and a couple cut up lemons. it works especially well with cryovaced packaged meat. also makes membranes come off spares a lot easier. and also gets rid of that funky smell you sometimes get from packaged meat.
My neighbor and I just had a conversation on this subject on a no burn "spare the air" day, and decided to keep a tri tip handy and a cooking grate setup for the fireplace or firepit, just in case the powers that be came a knoking.. smoke on
nice build, what temps will the powdercoating withstand ? I guess my question is will the firebox keep it's color or burn off in time? I have two finished smokers that i want to powder coat.
i just made a big ol pot of gumbo a couple of days ago. my recipe was about the same as yours ,with the addition of dungeness crab and a boatload of shrimp. it,s my favorite.
there are a few of the members that have them on this forum i have an xl that was expensive but imho it was worth it. it's kinda like having a mac and a pc all in one. you can do everthing other smokers can do plus other things like bake, sear, cook pizzas etc. annd you can do these things...
